WILD GARLIC AND ASPARAGUS BAKED EGGS

  • 2 handfuls of baby spinach
  • 1 bunch of asparagus
  • handful of wild garlic
  • 3 spring onions chopped
  • 2 organic eggs
  • 1 lemon
  • handful of coriander
  • 1 green chilli (optional) chopped
  • salt
  • pepper

Method

  • Preheat the oven to 180. Add the spinach and wild garlic to a ovenproof dish, squeeze with lemon juice, olive oil and season. Add the spring onions, chilli and asparagus. Make 3 holes along the mixture and crack the egg into it carefully. Season well and place in the oven for 7 minutes.

    Wild garlic is known for its antibacterial, antibiotic and possibly antiviral properties, and is rich in vitamins A and C. Asparagus also helps in fighting bacterial infections which makes the immune system strong. Asparagus is a great source of B-complex vitamins which are essential for energy production and to maintain the nervous system. Rich in Vitamin C which develops a resistance against infections, pro-inflammatory free radicals from the body and harmful diseases by boosting immunity.
