Breakfast

Start The Day Right Smoothie

1 1/2 tsp soaked oats

250-500ml (1-2 cups) unsweetened almond milk or filtered water – whichever you’d prefer

handful of kohlrabi or whatever green leaves you have/prefer

1 apple

1 tsp ground cinnamon

5cm piece of root ginger

Method

Soak the oats before you make the smoothie for at least 30 minutes or overnight then add all ingredients to your blender and off you go! You can grate the ginger in if you’d prefer!

Lunch & Dinner 

Butternut Squash & Lentil Stew with Brown Rice

1 Butternut Squash peeled & chopped

1 Cup of Lentils

1 Can of Black Beans

Chilli ( as much or little as you can tolerate)

1 tsp Turmeric

Ginger (as much or little as you can tolerate)

2 Garlic Cloves crushed & roughly chopped

2 Onions roughly chopped

Cavolo Nero shredded

Handful of cherry tomatoes

Kale Shredded

1 Litre of Veg Stock (I made my own simply by using up all my veg and herbs adding some water and simmering for an hour)

1 cup Brown Rice

Method

Chop, peel, shred all ingredients into a pan, add the veg stock and cover with a lid and cook for 45 mins-1 hour.

When the stew is softening nicely, cook the brown rice, this will take about 20 minutes.
