Super speedy broad pea and mint soup… then leave to simmer!

Ingredients

  • 750g bag of broad beans
  • 400g fresh peas in their pods if poss! V roughly chopped
  • 5 large spring onions, roughly chopped
  • medium handful of mint
  • water (enough to cover, add more if you would like the soup thinner)
  • 1 tbsp of gluten free organic bouillon powder
  • Himalayan Crystal salt
  • Black pepper

Method

  • Add all the ingredients into the pan cover with water and bring to the boil. Simmer for 20 minutes, then using a hand blender give it a blend. (I like it when it has quite a rough texture, so I don't blend too much!). Eat hot, or leave it to cool and put in the fridge for a chilled soup!
