- 1 broccoli
- 1 bunch basil
- 1 bunch parsley
- handful spinach
- 1 lemon
- Handful of sunflower seeds
- 20g Parmesan (optional) vegan Parmesan will also work!
- 1 clove garlic
- himalayan salt
- A good glug of olive oil
Chop broccoli roughly. Add all ingredients to a blender and blitz until smooth.
Taste and adjust the flavours adding more lemon, salt or pepper if required.
Store in a glass jar in the fridge for up to 3 days.
Pair this with brown rice spaghetti, vegetable pasta, dressings for fish or salad
