Summer Bean Burgers

Ingredients

Makes 10 Patties

  • 400g Black Beans
  • 400g Chick Peas
  • 400g Pinto Beans
  • 1 Large Onion Chopped
  • 3 Cloves of Garlic Crushed
  • 2 Red Chillies
  • Handful of Coriander
  • 1 Bag of Spinach
  • 2 Limes
  • 400g Frozen Peas
  • 1/2 Jar Harissa
  • 2 Cups of Oats

Method

  • Firstly, defrost the frozen peas, as you need the moisture! Soak the chick peas, black beans, pinto beans.
    Preheat the oven to 180. Squeeze the moisture out of the chick peas and black beans. Mash the pinto beans.
    To a food processor/blender add the chick peas, black peas, onion, garlic, chilli, coriander, spinach, peas, harissa, the juice of the limes and grate the rind. Whizz it up!
    Fold the oats and mashed pinto beans into the mixture.
    You will need a foiled baking tray, mould your patties and place on a tray.
    Bake for 40 minutes. I found they were still soft so place them under the grill for 5 mins on each side! Be careful when removing them as you don't want them to break so you will need a flat utensil to get underneath.
