
Ingredients
feeds 1-2
- 1 fillet of smoked mackerel
- 2 little gem lettuce
- 2 medium tomatoes
- 3 spring onions
- 1/2 a pomegranate
for the dressing
- 1 tsp of horseradish creamed or grated fresh
- 1 tbsp of balsamic vinegar
- juice of 1/2-1 lemon
- 2-3 tbsps of olive oil
- salt and pepper
Method

Rip the lettuce, chop the toms, spring onions and pop out all the pomegranate seeds into a bowl, flake in the mackerel and mix!
For the dressing put it all into a bowl and give it a good stir and then dress the salad before you serve!
