Salsa Verde is a sauce/dressing which as far as I can tell is basically herbs, garlic and olive oil, all of which are super foods and wonderful for you. I reckon you can tinker with which herbs you use.
Below is my recipe, and here is a brief explanation of how the herbs and ingredients I used can benefit you.
Parsley… High is Vitamin C, and B. It is a great antioxidant, helps with every levels, water retention and can help calm the gut.
Mint…. GUT calming and stimulating at the same time, but in the right places and for the right reasons. Will help with gas, and bloating while helping digestion. Can be helpful if you get headaches that are linked to food.
Basil… Again good on vitamin C but also antibacterial and anti-inflammatory, (mint is too).
Garlic is great for the liver, immune system and is full of minerals and more.
Olive oil is one of those fats known as a ‘good fat’ , which it really is. It can help the body with many things including cholesterol, heart disease, blood pressure and is great for inflammation.
My lot love it on its own, so you could use it as a dip, or a thick dressing for a salad, it is great on a jacket, it can be used like a pesto on pasta, I often use it as a sauce for fish. Whatever you do with it, you know it is nutrient dense, versatile and tastes amazing.
- 2 handfuls of parsley
- 1 handful of mint
- 1 handful of basil
- 1-2 cloves of garlic
- 2 tablespoons of capers
- Quite a lot of olive oil 6-8 tbsps
- 2-3 tbsp of apple cider vinegar
- 1-2 tsp of mustard, I used wholegrain for this one, but Dijon works well too
- Himalayan crystal salt
- Black pepper
Finely chop all the herbs with the garlic and capers, I just go over and over it with a knife. Put into a bowl.
Add the oil, vinegar, mustard, salt and pepper stir altogether and it is done!
