SALMON, LEEKS, CAPERS, CAULIFLOWER RICE SERVED WITH PEAS & BROCCOLI

Ingredients

Salmon, leeks and cauli rice

  • 4 salmon fillets
  • 3 leeks chopped
  • 3 tsp of capers
  • 1 lemon- juice of
  • 1 cauliflower
  • 200g of peas
  • 1 head of broccoli cut into florets

Method

  • Preheat oven to 180.
    In foil place the salmon fillets, squeeze of 1 lemon, 3 leeks and capers. Create a parcel and place in the oven for 15-20 minutes.
    Make the cauli rice, by chopping the cauliflower and adding to a food processor, pulse until consistency is similar to rice.
    Steam the broccoli and peas for 5-8 minutes.
    Serve
