Roasted Sea Bream with Garlic, Lemon and Rosemary


This will feed 2-3 of you depending on the size of the fish..

  • 1 Whole Sea Bream (gutted and scaled)
  • 1lemon sliced
  • 2 cloves garlic squashed
  • a few slices of onion
  • 2 sprigs of rosemary
  • a glug of olive oil
  • black pepper and H. crystal Salt


  • You need to pre heat the oven at around 200C.

    Take a piece of parchment paper (grease proof paper), large enough to wrap the fish in and sprinkle some olive oil onto it, along with some salt and pepper.

    Lay this on top of a piece of foil that will wrap all of the parchment paper with the fish into it.

    Take the fish and stuff with the garlic, rosemary, pepper, some of the lemon slices and a few slices of onion. On to the top of the fish add the other slices of lemon and onion, a bit more olive oil and salt and pepper.

    Close the parchment, and foil around the fish and place on a baking tray. Put in the oven for 20-25 mins.... The juices will steam in the package and keep the fish moist.

    When you take it out of the oven, the flesh should fall from the bone, and I serve with a green salad and/or brown rice.
