Pearl Barely Butter Bean Salad with a Basil Oil


Serves 4

  • 400g butter beans (rinsed)
  • 1 cup pearl barely
  • 2 courgettes (peeled)
  • half a bunch of spring onions
  • 1 bag of pea shoots
  • 1 small bag of basil
  • 1-2 lemons
  • 1/4 cup Olive oil (add more if needed)
  • 1 small garlic clove
  • 2 handfuls of coriander
  • 2 handfuls of mint


  • Start by boiling the pearl barely for 20 minutes. In the meantime, chop the herbs, peel the courgettes, add butter beans, chop the spring onion and mix together. Make the oil by adding the basil, olive oil juice of 1 lemon and garlic to a hand blender, whizz up, season if needed and add extra lemon if you like it extra zesty! Drain the pearl barely and wash with cold water. Once cooled add to the rest of the salad and mix thoroughly. Add pea shoots and place on top then drizzle the basil oil all over and enjoy!
