I have discovered paleo wraps, and I love them. Made from coconut meat, coconut water and unrefined coconut oil, these are brilliant if you are doing the paleo diet and not eating any grains but also for anyone who is not great with wheat, or is avoiding carbs, or children. If you are doing paleo, then sandwiches are out for lunch, and as we know they are not the most beneficial lunch we can eat, they can leave us feeling bloated and tired and shop bought sandwiches are often shockers for salt, sugar and fat content. I have been using these lately and they have been a huge success, especially with my children. You can add falafel, peppers, alfalfa, hummus, chicken, avocado, the list is endless and you can be as creative as you want. They are light, hold together well and taste really good.
On a nutrition front coconuts are high in fibre, good fats(really good fats), vitamins C, Bs and E and also high in the minerals iron, selenium, magnesium and phosphorus. One of the fats found in coconut is lauric acid, which is anti bacterial and antiviral so means that coconuts help support your immune system. Another benefit of the fat in coconuts is that it is metabolised faster than other saturated fats and therefore used and not stored by your body!
