KETO LETTUCE WRAPS

Ingredients

CAJUN CHICKEN

  • 2 chicken breasts
  • 2 tbsp of cajun spice
  • 1 lime - juiced
  • 2 garlic cloves crushed

Method

  • Marinade your chicken for as long as possible. Add all ingredients to a bowl and mix thoroughly. Set aside or over night. Preheat the oven to 180. Add some olive oil to a frying pan to seal the chicken. Place the chicken and brown on each side. Place on a baking dish and cover with foil. Bake for 25minutes until chicken is completely cooked through. Remove from oven and slice up.

Ingredients

LEMON, GARLIC, PARSLEY PRAWNS

  • 1 packet of raw or cooked tiger prawns
  • 2 cloves of garlic crushed
  • handful of parsley (extra parsley for garnish)
  • 1 lemon - juiced

Method

  • Combine all ingredients and add to a pan with olive oil. If cooked heat through for 2-3 minutes. If raw cook until completely cooked through.

FOR THE WRAPS:

  • 2 little gem lettuce
  • 1 carrot peeled and thinly sliced
  • 1 pepper - any colour - thinly sliced
  • 1 spring onion chopped finely
  • 1 avocado thinly sliced
  • sprinkle of sesame seeds

Method

  • Tear the gem lettuce leaf by leaf and place on a dish. Add either chicken or prawns first followed by the carrot, pepper, avocado. Sprinkle with spring onions and sesame seeds. You could also have some extra greens on the side like lemon oil asparagus or chilli broccoli in olive oil.
