
These are so perfect on a hot afternoon and are really refreshing. Ice lollies are often filled with the worst ingredients, turn over the box and you’ll see an ingredient list a mile long!
You will need:
Ice lolly moulds (nearly all supermarkets sell them and places like amazon and argos)
1 ½ cup (375g) coconut yoghurt I like to use coyo
2 tsp vanilla extract
3 tbsporgabic raw honey, or good quality organic maple syrup
1 ½ cup raspberries
Method:
In a small mixing bowl, combine the yoghurt, vanilla and honey or maple syrup. Whisk until smooth. Fold in the raspberries, lightly smashing them with a fork as you go.
Spoon the mixture into lolly moulds and freeze for 6 hours or until set.
Keep stored in the freezer until ready to serve.
