This is a great one for the family on the weekend, the kids love it and because it has such wonderful ingredients it is a great start to the day! Eggs are a complete protein, a good loaf of bread offers complex carbs that are slow burning energy, cinnamon will help balance your blood sugar levels, berries are antioxidant power houses amongst other things and mint helps the digestion! I love using my homemade bread for this, I like the consistency and the seeds are good too, but you can use which ever bread you like, the healthier the better obviously!
For the toast.
- 2 eggs
- 6 slices of a nutrient dense bread
- 3 teaspoons of cinnamon
- a sprinkle of icing sugar
- a sprig of mint to decorate (although it is nice ripped and sprinkled onto the toast)
- a teaspoon of coconut oil
For the berry and mint salad
- 1 pomegranate
- 1 passion fruit
- a punnet of blueberries
- a punnet of raspberries
- a punnet of blackberries
- and 6 strawberries chopped
- 8 leaves of mint chopped
First make the berry salad. It is so simple, squeeze or spoon the pomegranate and passion fruit pips into the bowl and then add the other berries, and mint and give them a mix. Because of the juice from the pomegranate and passion fruit you will not need to add anything else.
Crack the eggs into a bowl and whisk them add the cinnamon, pouring the mixture into a high sided dish put the slices of bread in and cover both sides with the egg mixture.
Warm the coconut oil in a frying pan until hot and the put the slices of bread into the pan. Cook each side until the egg on the bread is golden brown.
Place on a plate and sprinkle the icing sugar on top and pop on the mint so it looks pretty!
Pop a slice onto a plate and put the berry salad on top and have a lovely breakfast! ( you could add a little agave or maple syrup if you would like!)
