Comfort food..Brown rice spaghetti with ribbons of carrot and a feta and arame, onion garlic sauce.

Comfort food is exactly what it says, comforting! However this does not mean that it has to be trash, and I think there is a culture of sabotaging our selves when we are feeling in need of a little indulgence food wise. We can try really hard all the time and when something knocks us we ruin it all by grabbing foods that undo all our good work. I am just as bad!
Pasta is a lovely filling carbie wonder, and v  popular. This is a different take on spag bol, using foods that will help us and won’t make us feel worse! Apart from using brown rice pasta (which you will know by know is one of my preferred alternatives) I am also using salmon which is full of omega 3, and feta a low fat cheese, I have also added arame sea vegetables. These are full of chlorophyll (antioxidant power), and this is a good intro to using seaweeds and vegetables which are nutrition powerhouses. Ribboning carrot is a good way to include a bit of raw veg and make it a more balanced meal….

  • Brown rice spaghetti 1/2 a pack
  • 1-2 carrots ribboned (use a veg peeler)
  • 75 grams of smoked salmon
  • 50 grams of feta cheese
  • a large pinch of arame sea vegetables
  • 1 medium onion, roughly chopped
  • 1 large bulb of garlic, crushed
  • Squeeze of half a lemon
  • Black pepper
  • a teaspoon of coconut oil
  • 1 cup of water

  • Put a large pan of boiling water on for the spag.

Into another deep frying pan, melt the coconut oil, add the onion and the garlic, when soft add 1 cup of water.
One this is simmering again add the feta cheese, crumble it as you add it to the sauce and pepper.
Chop or rip the smoked salmon roughly into the pan and give a stir. Remove from the heat and add the arame and lemon. Leave it for 10 mins, the arame will absorb a lot of the juice as it expands.
This gives you a chance to do the pasta and do your carrot ribbons…. Carrot ribbons are very easy, just use a veg peeler and keep on 'shaving' bit of carrot off till you can shave no more!

Drain the pasta, you can add a drizzle of olive oil if you would like, mix in the raw carrot ribbons and then pour the sauce into the pasta and carrot and its done!
