

Christmas 2017 | Roasted Rainbow Carrots
full of beta carotene, vitamin c, good for the gut, immune support and high in anti-oxidants
Ingredients
- 1kg of Rainbow Carrots
- 2 tsp Cumin Seeds
- 1 Juice of Lemon
- Handful of Parsley
- 5-10cm Ginger
- 3 tbsp Olive Oil
Method
- Start by grating the ginger, squeezing the lemon, pouring the olive oil and sprinkling the cumin seeds in a bowl. Season with salt and pepper. Mix together well. Place your carrots in an oven proof dish and drizzle the mixture over the top.Place in the oven for 45 minutes.
