Chickpea, Tomato and Kale Stew with Lemon Infused Quinoa

This is a lovely dinner or lunch that can be enjoyed anytime of year, it has fresh summery flavours but it still has that comforting factor. This is a great protein rich meal. The quinoa provides a complete protein and lots of great B-Vits! Chickpeas again provide a great vegetarian protein and a source of fibre. Tomatoes provide us with antioxidants and a rich source of vitamin c! The superfood that is Kale gives a chlorophyll boost which contains detoxifying powers and is supporting of your liver!


Serves 4

  • 400g Chickpeas
  • 1 Onion
  • 2 Cloves of Garlic
  • 20 Cherry Tomatoes
  • 1 Can of Chopped Tomatoes
  • 1/2 Bag large Kale
  • 1tsp Turmeric
  • 1 tbsp Cumin
  • Handful of Coriander


  • Start by crushing and dicing the onion, using coconut oil, fry off the onion and garlic. Add a little but of water to help soften. Next add the cumin and turmeric and a little more water. Add the tomatoes and chickpeas and cook for 3 minutes. Add the chopped tomatoes and coriander, simmer for 30 minutes. In the mean time squeeze the lemon into boiling water followed by the quinoa. Simmer for 20 minutes. Once all has soften add the kale and place the lid for it to wilt down. Plate it up and enjoy!
