Chickpea & Lentil Dhal

Ingredients

Chickpea & Lentil Dhal

  • 400g chickpeas
  • 1 cup of red lentils
  • 1 onion
  • 1 clove of garlic
  • 2 tsp turmeric
  • 1 tsp cayenne pepper
  • 2 tsp cumin
  • 2 sweet potato (cubed)
  • 1 bag of spinach
  • 1 tsp coconut oil
  • 500ml veg stock

Method

  • Start by frying the onion and garlic in some coconut oil. Add the turmeric, cumin & cayenne pepper and stir though coating the onions and garlic. Add the lentils, chickpeas, sweet potato and veg stock. Simmer for 20-25mins. Lastly add the spinach and wilt for 5 mins. When serving be sure to sprinkle coriander on top. This great along side some buckwheat flat bread or brown rice.
