Cauliflower & Pomegranate Tabbouleh

a wheat/gluten free tabbouleh, very fresh and full of flavour!

Ingredients

Serves 4-5

  • 2 Cauliflower Heads
  • 1 Red Onion
  • 3 Large Tomatoes
  • 1/2 Cucumber
  • 2 Handfuls of Mint
  • 2 Handfuls of Parsley
  • 1 Pomegranate
  • 1-2 Lemons (to taste)
  • 2 Large Handfuls of Sunflower Seeds
  • Flax Seed oil (to taste)
  • S&P

Method

  • 1. Start by prepping all the veg and herbs by finely chopping everything!
    2. Place the cauliflower in a food processor and whizz it.
    3. Simply, chuck everything in, add the oil, lemon, S&P and give it a good stir! Taste and add more of anything it needs.
    4. Eat it up... easy peasy!
