

Cauliflower & Pomegranate Tabbouleh
a wheat/gluten free tabbouleh, very fresh and full of flavour!
Ingredients
Serves 4-5
- 2 Cauliflower Heads
- 1 Red Onion
- 3 Large Tomatoes
- 1/2 Cucumber
- 2 Handfuls of Mint
- 2 Handfuls of Parsley
- 1 Pomegranate
- 1-2 Lemons (to taste)
- 2 Large Handfuls of Sunflower Seeds
- Flax Seed oil (to taste)
- S&P
Method

1. Start by prepping all the veg and herbs by finely chopping everything!
2. Place the cauliflower in a food processor and whizz it.
3. Simply, chuck everything in, add the oil, lemon, S&P and give it a good stir! Taste and add more of anything it needs.
4. Eat it up... easy peasy! -
