This is so easy, and a lovely veg side. It has the same feel as traditional mash, but it much more nutrient dense. I have slipped in the kale and the wild garlic, which helps to boost the recipe and provide a really full array of vitamins and minerals. Wild garlic has all the wonderful benefits of garlic and is especially good for blood pressure! (if it is not in season then you could always use normal garlic, BUT when it is pick lots and freeze!!!)
- 3 carrots
- 2 medium sweet potato
- 1/2 a bag of kale
- a small bunch of wild garlic
- himalayan crystal salt
- Black pepper
- A good knob of butter or coconut oil
Boil a pan of water and put in the chopped carrots and sweet potatoes.
Chop the kale and wild garlic quite finely and after around 7 mins add to the pan and boil for another
5 -7 mins
Remove form the heat and strain, (I leave a little bit of the juice in the pan), then add the salt, pepper and butter or coconut oil and give it a good mash! Delicious!
