
Ingredients
Broccoli, Edamame Bean & Tamari Tempeh Salad with Lemon Tahini - serves 4
- 500g broccoli florets
- 500g edamame beans
- 1 block of tempeh cubed
- 1 clove of garlic
- 50g alfalfa or any sprouted veg/seed
- 1 tsp tamari
- tahini dressing:
- 1 cup (120g) tahini
- ½ cup lemon juice
- 1 garlic clove
- salt & pepper to taste
- ½ cup olive oil (add gradually)
- 1/3 cup of water
Method
- Cube the tempeh and fry off in garlic and tamari sauce. Steam the broccoli and Edamame beans for 5 mins. Combine the teem, beans and broccoli. Sprinkle the alfalfa on top and drizzle your tahini all over.
