Sweet potatoes and turmeric chickpeas
- 4 sweet potatoes
- 400g of chickpeas
- 1 tsp of turmeric
- 1/2 cayenne pepper
- 1 lemon
- 4 handfuls of spinach
- 1 onion diced
- Olive oil
- Salt and pepper to taste
- Preheat the oven to 180. Drizzle the potatoes in olive oil and season. Place them in the oven for about 30 minutes.
- Drain the chickpeas, add all the spices, diced onion and juice the lemon, season and add a high of olive oil. Mix thoroughly. Place on a baking tray and in the oven for 20 mins.
- Remove potatoes and chickpeas from oven. Combine the spinach with chickpeas.
- Slice the potatoes open and stuff the chickpeas in and season the taste.
