Baked Sweet Potato with Spiced Chickpeas - serves 2
- 2 sweet potato
- 400g chickpeas
- 1 tsp turmeric
- 1/2 cayenne pepper
- 1 tsp zatar
- 1 lemon
- 2 handfuls of spinach
- 1 onion diced
- olive oil
- salt + pepper
Preheat the oven to 180. Drizzle the potatoes in olive oil and season. Place them in the oven for about 30 minutes.
Drain the chickpeas, add all the spices, diced onion and juice the lemon, season and add a high of olive oil. Mix thoroughly. Place on a baking tray and in the oven for 20 mins.
Remove potatoes and chickpeas from oven. Combine the spinach with chickpeas.
Slice the potatoes open and stuff the chickpeas in.
Season the taste.
Full of beta carotene, anti-inflammatory and anti microbial properties. High in fibre, iron, vitamin c and plant protein. Wonderful for balancing blood sugar levels.
