ASPARAGUS, PEA & CUCUMBER SALAD with a BASIL VINAIGRETTE - serves 4
- 200g greens peas
- 1-2 bunches of asparagus
- 1 cucumber
- 2 handfuls of sunflower seeds
- small bunch of mint
- 1 bunch of basil leaves
- 1 clove garlic
- 2 tablespoons chopped shallot
- 1 lemon - juice of
- 2 tablespoons apple cider vinegar
- pinch of salt
- 1/2 cup olive oil
- black pepper to taste
Start by steaming the peas and asparagus for 5 minutes. You want the asparagus to have some bite to it. Drain and refresh with some cold water. Get a potato peeler or spiraliser if you have one - and peel the cucumber lengthways creating ribbons. Add this to the asparagus and peas, mix through. Add the seeds and mint leaves picked off the stems.
For the dressing add all ingredients to a blender and blend until smooth. Taste and season if needed.
