We should eat more of these when they are in season, not only do they look pretty they taste delicious especially with a Dijon mustard, olive oil, lemon and apple cyder vinegar dip. They are easy to prepare, just steam and go!
So why am I telling you about artichokes? What are they good for?
They are wonderful for our livers, and aid detoxification because they contain silymarin, which is the active ingredient in milk thistle, they help improve bile flow and boost the gall baldder. Artichokes are a great digestive aid helping with stomach acidity; they also act as a diuretic so help issues of water retention. All in all not bad for such an under used vegetable!
