2 Spring Onions (finely sliced)
4-5 Carrots (finely sliced)
1 Small Bulb of Fennel (finely sliced)
1/2- 1 Lemon
Handful of Almonds
1/2 cup of Extra Olive Oil
1 Tsp Honey
Start by making the dressing. Add half the avocado, honey, spring onions, salt, pepper, lemon & olive oil into a hand blender and whizz it up until smooth. Taste and adjust with either more lemon, salt, pepper, honey.
Combine the kale and half of the dressing into a large bowl. With your hands work the dressing into the the kale util it softens up.
Add the carrot, fennel, remaining avocado and almond and gently toss.
Pour the remaining dressing over and you’re ready to serve!
