Black Bean Stew

This is a great all rounder! The black beans are a brilliant source of vegan protein. Coriander is detoxifying and will help with heavy metals. As we all know the wondrous kale is incredibly nutrient dense, with numerous vitamins and minerals! The chilli and cayenne pepper is thermogenic and a great metabolism booster. The onions, garlic and leeks are sulphurous and also prebiotic!


Serves 4-5 People

  • 800g Black beans (2 cans or soaked over night)
  • 3 onions
  • 3 garlic cloves
  • 2 leeks
  • 1/2 bag of kale
  • chilli flakes
  • 2 tsps of cayenne pepper
  • 2 tsps of harissa
  • A good handful of coriander
  • Juice of 1 lemon
  • Vegetable stock
  • Olive oil
  • Himalayan Crystal salt
  • Pepper


  • Soften the onion and garlic in the olive oil.
    Add the leeks and then add beans, lemon juice, S and P, chilli and cayenne, harissa and stock. Stew for about 30 mins then add the kale and leave for another 10 mins.
    Lastly sprinkle the coriander in and stir through.
    Serve with brown rice, quinoa or a baked sweet potato!
