TOAST

Toast is one of my all time favourite! Always hits the spot, there are so many variations when it comes to toppings.. sweet… savoury! People avoid toast because they think it is unhealthy and if we are talking about white bread made out of refined white flour then there isn’t much nutrition going on and it’s high in sugars – but not all breads are equal and some are amazingly nutrient dense. Its easy to boost your toast by simply adding nuts, seeds, fruit, veg and use great bread! I’m a big fan of buckwheat (gluten free) and rye or sourdough bread, they are easy to make in a bread machine. However you can get some great breads in supermarkets if you can’t quite commit to a bread machine. Here are some toast topping ideas that can be used as a great breakfast or a small snack.

Ingredients

3 Nut Butter & Banana

  • 1 small banana
  • Whole Earth nut butter (your choice, I used 3)
  • Drizzle of Raw honey
  • 1 tsp of chia seeds
  • 1 tsp sunflower seeds
  • Rye bread

Method

  • Toast the bread, spread to nut butter on, squash the banana on, drizzle the honey, sprinkle the seeds and chew!

    This is a great protein hit, perfect for post workout, a good hit of potassium, this should energise you!

Ingredients

Avocado, Chill & Egg

  • 1 ripe Avocado
  • Chill flakes
  • Eggs
  • S&P
  • Rye bread

Method

  • A classic... toast the rye bread, smash the avocado on top, poach the egg for about 40 seconds and place on top. Sprinkle the chilli and s&p! If egg isn't your thing then try some fresh tomatoes and rocket on top!

    This is a great start to the day, full of omega 3's, protein hit and chilli is great for getting the metabolism going. This really keeps you going.

Ingredients

Hummus, Cucumber & Rocket

  • Dollop of Hummus
  • Sliced cucumber
  • Handful of rocket
  • Pinch of sunflower seeds
  • Drizzle of flax seed oil
  • Rye bread
  • s&p

Method

  • Toast, spread, slice, sprinkle, drizzle & season!

    Great proteins from the hummus and seeds. Rocket is lovely and bitter which stimulates the liver! Flax seed oil is a wonderful source of omega 3 and cucumber is hydrating.

Ingredients

Raw Honey with speedy raspberry jam

  • Raw honey
  • Handful of raspberries
  • 1 tsp of chia seeds
  • Pinch of desiccated coconut
  • Rye bread

Method

  • Toast the rye bread and spread the raw honey first. In a little dish add raspberries and chia seeds, mash slightly so the juice comes out of the raspberries. Spread this over the honey and sprinkle to coconut on top!

    Raw honey has wonderful phytonutrients both providing anti inflammatory and antioxidant power! The raspberries are also powerful antioxidants and rich in vitamin c so wonderful for the skin. Chia seeds has great omega 3s and protein.
