Herby Garlic Butterbean Pasta

A lovely quick and easy lunch or dinner full of fresh simple ingredients. This is an ideal meal for post workout or if you need an energy boost. Parsley and coriander are wonderful herbs, very medicinal, coriander especially is great for its detoxifying powers whereas parsley really packs a punch of energy! Butterbeans provide a wonderful plant protein aswell as vitamin B1/B6, iron and magnesium. Lemon has such a great fresh flavour in this, full of vitamin c and alkalising! Spinach is full of vitamins and minerals especially B vitamins, zinc, iron and calcium. Peas pack a great protein punch as well a vitamin c. A super nutrient dense meal!

Ingredients

Serves 4

  • Brown Rice Pasta
  • 1 Lemon
  • 2 Garlic Cloves (finely chopped)
  • 400g Butter Beans
  • 2 Large Handfuls of Parsley
  • 2 Large Handfuls of Coriander
  • 1 Tbsp Olive Oil
  • 1 Bag of Spinach
  • 2 Cups of Peas
  • S&P
  • 1 Fresh Red Chilli (finely chopped)
  • Halloumi (finely grated)

Method

  • Start by adding the brown rice pasta to a pan of boiling water. This should take about 8-10 minutes.
    Drain the beans, add them to a mixing bowl along with the lemon, chilli, garlic, olive oil, parsley, coriander and s&p. Make sure all is mixed through.
    Steam the spinach and peas for 3-5 mins.
    Drain the pasta and rinse, add the spinach and peas followed by the butterbean/herb mix, give it a good mix through and add any extra seasoning if need be! Serve and grate a little bit of halloumi of good measure.
