Ingredients

  • 1kg of Rainbow Carrots
  • 2 tsp Cumin Seeds
  • 1 Juice of Lemon
  • Handful of Parsley
  • 5-10cm Ginger
  • 3 tbsp Olive Oil

Method

  • Start by grating the ginger, squeezing the lemon, pouring the olive oil and sprinkling the cumin seeds in a bowl. Season with salt and pepper. Mix together well. Place your carrots in an oven proof dish and drizzle the mixture over the top.Place in the oven for 45 minutes.
