CHICKEN, TURMERIC & CAVOLO NERO SOUP

Ingredients

serves 4

  • 1 medium yellow onion diced
  • 3 large carrots thinly sliced
  • 3 celery stalks roughly chopped
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon himalayan salt
  • ¼ teaspoon pepper
  • 2 teaspoons freshly chopped rosemary
  • 2 teaspoon freshly chopped thyme
  • 1.5 litre organic chicken stock
  • 4 Organic chicken breast
  • 1 bunch of cavolo nero

Method

  • Using a slow cooker add all the ingredients apart from cavolo nero and place on high for 3 hours. When the timer only has 30 minutes remove the chicken and pull it apart using the back of a fork. Place it back in for a further 30 mins. Once the timer is up add the cavalo nero and allow to sit for 10 mins until serving.
