Broccoli, Edamame Bean & Tamari Tempeh Salad with Lemon Tahini 

Ingredients

Broccoli, Edamame Bean & Tamari Tempeh Salad with Lemon Tahini  - serves 4

  • 500g broccoli florets
  • 500g edamame beans
  • 1 block of tempeh cubed
  • 1 clove of garlic
  • 50g alfalfa or any sprouted veg/seed
  • 1 tsp tamari
  • tahini dressing:
  • 1 cup (120g) tahini
  • ½ cup lemon juice
  • 1 garlic clove
  • salt & pepper to taste
  • ½ cup olive oil (add gradually)
  • 1/3 cup of water

Method

  • Cube the tempeh and fry off in garlic and tamari sauce. Steam the broccoli and Edamame beans for 5 mins. Combine the teem, beans and broccoli. Sprinkle the alfalfa on top and drizzle your tahini all over.
