Breakfast on the GO!

Nowadays we all have hectic schedules and the simple task of eating a nutritious breakfast in the morning can seem difficult. Whether you’re up early commuting to work, doing the school run or going to the gym before work I have 4 breakfast ideas below that are nutrient dense, filling, easily transported and will give you a real boost at the start of the day!

Cinnamon, Goji Berry Bircher Museli

This is a great one and super quick to make the night before.  The oats are a fantastic slow burning fuel and soothing for the gut. This has a lot of antioxidant power from the berries and pomegranate. The pumpkins are a good source of protein! Cinnamon is perfect for balancing your blood sugar levels. I used almond milk for this a great milk alternative, hydrating and a good source of calcium!

RECIPE

1 Cup of Oats

1-2 tbsp of cinnamon

1 1/2 cups of almond milk

Handful of goji berries, strawberries, pomegranate & pumpkin seeds

Simply chuck it all in together, give it a stir and place in the fridge overnight!

 

 

Salmon, Avocado, Egg & Rocket Bowl

This is a particularly great one after the gym! This is a protein heavy breakfast. Fantastic good fats, which will help with your blood sugar balancing also great for skin, hair and nails! This has a wonderful amount of omega 3s which are essential, as our bodies can not produce these naturally they need to be consumed! The rocket is perfect for the morning as it is a stimulant for the liver and gets the juices flowing. The lemon is lovely and alkalising. Over all a pretty great start to the day with this one!

1 Egg

Handful of Rocket

Smoked Salmon

Handful of Pumpkin Seeds

Wedge of Lemon

1/2 Avocado

This can be prepped the night before too. Hard boil the eggs and place them under cold water once done. Peel the shell away. Simple add everything together! Don’t squeeze the lemon until you are about to eat it in the morning and leave the avocado in its shell or squeeze with lemon to avoid to going brown! Place this in the fridge and don’t forget to take it!

Egg, Avocado, Pomegranate, Quinoa & Rocket Bowl

I know this doesn’t sound too breakfasty but this is really delicious, gluten free and a great start to the day, ! It’s a great source of protein from the eggs and quinoa! Good fats! Lovely antioxidants from pomegranate. I’ve used chilli in this which will get your metabolism working and your liver stimulated from the rocket!

RECIPE

1 Egg

Handful of Pomegranate

Handful of Rocket

1/2 cup of Quinoa

1 tsp of Chilli (optional)

1/2 Avocado

Handful of Sunflower Seeds

Boil your quinoa for 20 mins and hard boil your egg, once ready pile it all together and refrigerate until the morning!

 

Spicy Bean, Sweet Potato & Egg Wrap

This really fills you up with the right stuff and is delicious! Another great protein and fat rich breakfast from the eggs and beans! Sweet potato is a great complex carb, wonderful source of vitamin A and C, also B Vits! The coriander in this is a great detoxifier. Spinach is a great antioxidant and full of iron! I made a big batch of this to last a few breakfasts or you can freeze!

RECIPE

1 Egg (optional)

300g Cannellini Beans

300g Pinto Beans

300g Adzuki

1 Can of Chopped Tomatoes

Handful of Coriander

1 tbsp of Harisaa

1 tsp Chilli

1 Wrap (I used a coconut flour wrap with chia seeds) Avoid white flour wraps!

Handful of Spinach

Chuck all the beans in a pan, along with the chopped tomatoes, harissa, chilli and coriander. Simmer for 20 minutes! Hard boil your egg. I find this is much better to make up in the morning as it can get soggy. So refrigerate the egg and bean mixture and in the morning add the beans, spinach and egg to the wrap!
