Black Bean Bowl

Ingredients

Black Bean Bowl - serves 4

  • 4 sweet potatoes - cut into wedges
  • 1 can of black beans
  • 1 tsp cumin
  • ½ cayenne pepper
  • 1 cucumber cubed
  • 1 red onion thinly sliced
  • 1 avocado
  • 2 limes
  • 1 bunch of coriander
  • olive oil
  • salt & pepper

Method

  • Preheat oven to 200. Transfer sweet potato to an oven proof dish, drizzle with oil and roast for 25-30 mins. 

    Drain the black beans and transfer to a pan, add a tsp water, cumin and cayenne pepper. Heat and keep mixing through for 5 mins. Take off heat and squeeze in 2 limes. Add the coriander and mix through. Set aside.

    Prepare the red onion and cucumber and combine. Drizzle with olive oil, s&p. Smash the avocado with the back of a fork and and squeeze some lemon. Mix through. Take out sweet potato and plate up all components. Enjoy.
